# “海陆大餐”，新加坡肉食爱好者的狂欢

新加坡威斯汀酒店（The Westin Singapore）Seasonal Tastes最新自助晚餐促销，称为“海陆大餐”（Surf + Turf），也就是海鲜与肉类。但自助餐哪一间不是大鱼大肉呢？真正的主角其实是来自台湾W Taipei酒店执行主厨Joshua Marshall，以客席厨师身份带来多道拿手佳肴，7月底返台之后，菜式将留在新加坡威斯汀，直到9月30日。

客席厨师Joshua Marshall

酒店不是第一次与W Taipei合作，两年前邀请过台北的客席厨师，来的是台湾人，呈献台湾美食，自助餐主题直接称为台湾促销。而这回来的是洋人主厨，呈献的是美国加州与台湾美食。又美国又台湾，只好称之为海陆大会~

Joshua Marshall来自美国南加州，最拿手的当然是加州料理。他在台湾居住多年，太太是台湾人，因而对台湾美食也非常熟悉，此次来新还带来台湾助理，确保口味地道。

塞入内脏的烤牛肉

客席师傅的精心杰作，主要呈献在热菜餐台上。最特别的是烤牛肉里塞著一些内脏，内脏里夹着油脂，牛肉烤得外皮焦香，里面夹的内脏细嫩柔滑，整片咬下，扎实的口感中带着浓浓内脏油香。

墨西哥辣椒玉米肉饼

Mexican Chorizo Echilada墨西哥辣椒玉米肉饼，以香肠、肉碎、虾仁等用料制作，上面铺上浓浓乳酪，口味浓郁。

Seafood Cioppino

旧金山炖海鲜Seafood Cioppino在美国用的是当地Dungeness Crab，这里改用其他海鲜呈献，有贻贝、虾婆、虾子等，同样鲜香诱人。Pa’s pork green chilli，从菜名可知道是主厨父亲的家常菜。

蚵仔面线

更吸引我的是其实台湾美食，迫不及待拿了一大碗蚵仔面线，其他还有破布子蒸鱼、辣炒牛肉、阿里山茶熏鸡肉、香辣花枝等等。

台湾牛肉面

现点面摊上除了常驻的新加坡叻沙，促销期间也推出台湾牛肉面。还记得两年前的台湾美食促销，牛肉面水准一般，因而此次不抱太大期望，没想到一尝无比惊艳！师傅用牛大骨加牛小骨，慢火细熬三天，牛肉汤缩成很浓厚的汤汁，再加入牛腩与牛筋继续熬煮至汤汁浓稠。点用时加入烫熟的面条，瞬间饱吸了浓稠的牛肉汁，味道香醇浓厚，强力推荐。

冰上海鲜

促销期间其他餐台保持不变，冰上海鲜、凉菜沙拉、面包熏肉照常推出。甜品依然精彩，最喜欢的雪糕，口感绵密浓郁，推荐鳄梨与椰糖口味。

海陆自助餐只限晚餐时段，7月份成人$88/儿童$44，8月1日至9月30日成人$98/儿童$49。使用指定信用卡买一送一：7月份，Citibank或HSBC信用卡；8月-9月，大华银行信用卡。
